Chocolate Sugar Cookies

We have a nasty post little boy bedtime habit around here: cookies. It’s not every night, mind you, but, honestly, I think it is most nights. I make a batch of dough once a week or so, and we store it in the fridge, baking only what we “need” each night. Although, most nights we dip out chilled chocolate chip dough (Hubby’s favorite), slice and bake cookies work best for this. We are chocolate lovers over here, and I’ve tried making several chocolate slice and bake recipes, but this one, well, this one was the best yet. I adapted Mamie Eisenhower’s Sugar Cookie Recipe to make it chocolate, a bit lower in fat, and a bit lower in sugar.

Chocolate Sugar Cookies

  • 1 cup butter
  • 1 cup sugar
  • 1/2 cup honey
  • 2 whole eggs
  • 2 T cream (or milk if you don’t have cream)
  • 2 t vanilla
  • 1 t salt
  • 2 t baking powder
  • 1/2 cup cocoa
  • 2 1/2 cups whole wheat flour (We use only Bob’s Red Mill; much finer and better mixing than anything else!)

Sift dry ingredients together. Cream butter, sugar, and honey until well blended. Stir in the eggs, one at a time, and vanilla. Add the sifted dry ingredients alternately with the cream. Wrap in plastic wrap or waxed paper and chill until firm. Slice a 1/4 inch thick and bake at 350 for 10 minutes or until just set. Alternately, you can roll the dough out and make cut out cookies, but who has time for that on a week night after the kids are in bed?

    I agree – I don’t always feel like rolling out dough, so slice/bake is perfect for the weeknights.

    Slice and bake is great if you don’t like to roll out dough and press to make the shape of the cookies. I think that idea is great if you don’t have chocolate chunks or chocolate chips included in your recipe.

    This is so easy! I love cookies that is made just like that. Bake then slice it and that is cool. My kids will surely surprise if we are making this in our weekend baking activity.
