Peanut Butter Balls

The wonderful people at Mi-Del make an awesome whole wheat graham cracker that both my boys really like. Since it’s sweetened naturally with unrefined sugar, I feel pretty good about giving them to the boys. They also have a great recipe on the side of the box for peanut butter balls (uhhh… Correction, used to have on the side of the box…). I recently found myself in possession of a sleeve of graham crackers and a hinckering to make pb balls, but no box, and no recipe. I hunted all over the internet to find it, but eventually had to ask a friend. These things are so good, there is no sense in us not getting this awesome recipe out there.

Peanut Butter Balls

1 cup natural peanut butter
2/3 cup honey
1/2 cup non instant milk powder
27 MIDEL honey grahams
toassted wheat germ, chopped nuts, cocoa powder, or other coating

roll midel honey grahams into crumbs; add other ingredients. stir until well blended (in food processor). roll mixture into balls then into coating of your choice. makes about 30.

We use the food processor to make these, and I just put the graham crackers in first and pulse into crumbs before I add the other ingredients.

I rolled them into balls and dropped them into cocoa in a yogurt container for the preschooler to to roll around and coat.

He did a great job, and we, miraculously, did not wind up with cocoa all over the kitchen.

I guess we must make ours a little smaller than the recipe is written for as we ended up with about 60 of them. Normally I make things larger than called for, but we like our chocolate, and I like for these to be bite sized for the kids. They’re a huge hit around here with the boys, both big and small. Hubby LOVES them, and last time we made these (a good long while ago), we went out after the boys were in bed one night and left my sister-in-law baby sitting. She found the pb balls in the fridge and raided them with praise for them upon our return. Really, I think you can fool anyone with these.
